DILL SALT, FOR THE RIM OF THE GLASS

1½ OUNCES HENDRICK’S GIN

1 OUNCE FRESH CUCUMBER JUICE (SEE NOTE)

1 OUNCE TOMATO JUICE

1 OUNCE FEVER-TREE GINGER BEER

3 DASHES HELLA BITTERS GINGER LEMON BITTERS

Coat the rim of an old-fashioned glass with dill salt. Combine all of the remaining ingredients except the garnish in a cocktail shaker filled with ice. Roll the ingredients back and forth with another shaker 3 times. Fill the rimmed glass with ice and strain the cocktail into it. Garnish with a lemon wheel.

Note: To make the cucumber juice, use either a juicer or puree the cumber in a high-powered blender and then strain through a fine-mesh sieve.
